I lost my Mom 10 years ago-at times it feels like eons, other times it was a blink ago. If you’ve lost your Mom you probably know what I mean. Seldom does a day go by when I don’t think of something I wish I could share with her-good, bad or evil! My Mom was a very involved, hands on mother. She knew what was going on in all of our lives, not that she always approved. There was usually always a daily phone call-and you better have a great excuse for letting her go to voice mail( working nights meant nothing! Chocolate Bisquit Cake Fit For A Royal Wedding...

It’s two weeks til the Royal wedding. If like me you never received your invitation, here’s a way you too can feel like you’re at Buckingham Palace. The prince has requested this as his “Groom Cake”. It’s pretty simple, no bake and can be made in advance. Add champagne and a large, overdecorated hat and it will be like you too are hanging with Will, Kate and the Queen!! I know it’s Spring, the calendar assures me it has arrived. As I write this is snowing here in Massachusetts. NO! This isn’t an April Fools joke; as I write this, it’s March 31st and it’s snowing. I do however have faith that eventually we’ll be whining about the heat and humidity- and summer will be here! Here’s a recipe that requires minimal prep time, can be done hours in advance and reminds me that the snow will melt. I heard tonight that Hasbro will no longer be making the EZ Bake oven. Apparently incandescent light bulbs will no longer be available so the oven won’t work anymore. Remember that pink dream? It was the only present I wanted when I was 10. Those gooey cakes and brownies. In retrospect they were perfectly dreadful but at the time…fabulous! I remember riding bikes without a helmet, knee and elbow pads and a mouth guard. Playing flashlight tag we ran thru our neighbors yards. Going to the mall without a parent. Summer mornings heading out after breakfast and coming home at dinner after a day of adventures. Remember when it was OK to go Trick or Treating and not worrying about razor blades in the apples? When you think of Irish cuisine…well really, who thinks about Irish cuisine? It tends to be pretty bland, and starchy and quite honestly not usually worth thinking about! The one thing we think of as a staple is the king of all comfort food…the potato. Now before you read any furthur, this is not an Irish recipe; it is however my new favorite potato recipe. Whatever happened to courtesy? I remember when it was a sexist insinuation for a man to hold open a door or pull out a chair for a woman. No insult to Gloria Steinem but I never took offense to those gestures, they just seemed like simple civility to me. Whatever happened to courtesy? Right before the holidays I was at the supermarket. The wait was long. I was tired. All I wanted was to go home pour myself a glass of wine and just veg. Finally I made it to the front of the line. I gave the checker my frequent shopper card and politically correct, green cloth bags. I expect some pleasantries but she never even made eye contact. Dear Madison Avenue Advertising Executives, The holidays have come and gone; however, visions of marketing messages still dance in my head. Beginning at Halloween and ending at new year’s consumers are bombarded with constant hints of what your near and dear really wants to make the season bright. But ..if you’re single you are invisible. I’M SINGLE!! There- I said it. No one was buying me a Lexus wrapped in a big red bow. There would be no diamond bauble given to me by a handsome and obviously smitten gentleman. No overpriced watch or a charm bracelet commemorating all our special moments was in my Christmas stocking.
