Ok, so I’m not Carrie, Charlotte, Miranda or Samantha, but I did have a blast in New York City earlier this month. I was in town to film a web series in New York City. It’s a fun web series called Which Way, whose logline is described as a cross between Fame and Saved By The Bell. I play the mother of the lead character. The role is ongoing so I will be back to Gotham to film more soon. I will let you all know when the web series is available for viewing. I thought it would be fun to do a trip diary. November 2-4. Who hasn’t surrendered to the reality that the original strategy, tactic, and/or educational investment wasn’t panning out?  With such a volatile economy disrupted by technology, we’re all finding ourselves stumbling or even stuck.  Yet, it’s been tough to admit that, yet again, Plan A didn’t work.  We feel foolish.  Our confidence is shaken to the core.  And we just want to relocate to an emerging economy like Nigeria which is growing at about eight percent.  Could be that we will have more luck there. Almond Bars

Almond bars were a big seller for Chickens in the Kitchen this past summer.  This recipe is an adaptation of an Elana’s Pantry recipe.  Her book, The Gluten Free Almond Flour Cookbook, includes a delicious recipe for almond flour chocolate chip cookies. I learned, by experimenting, that you can make lovely almond flour cookies in a home oven, but a commercial convection oven will turn the batter into one very thin layer of cookie on the baking sheet!  Why?  The heat rises too fast and the batter melts.  Making bars solved that problem. Another change involved the almonds.  I don’t own a food processor and chop my almonds in the blender, resulting in a very coarse grind.  If I blend too long, I get almond butter and then I get distracted by lunch. The Thanksgiving List …and don’t forget the real whipping cream for the pie…;) Thanksgiving is my very favorite holiday, and not only because of the turkey and cranberry sandwiches at midnight.  Properly observed, the holiday is all about friends, family and being grateful for all you’ve had and have. Every year I sit down and make a list. Some years it’s longer than others, but it could still go on for pages. It’s amazing how much I have, even when the bank account could be larger and my hips smaller. Thanksgiving has been a take it or leave it holiday for me. When my dad was alive, my mother would make a huge Thanksgiving Day feast – she made the best stuffing with oysters. It was very good. (I could never duplicate that recipe even though I credit my mother with my skills as a good cook and my perfection with making a bed with hospital corners and a tidy house). 1 Step Thanksgiving, what to post for Thanksgiving?  It’s a holiday that I have a love/hate relationship with.  You see, I love to eat.  I love all the wonderful food prepared for the traditional feast.  Root veggies, roasted to perfection, homemade breads and pies, all sorts of yummy treats to delight the pallet.  I love to cook and share what I prepare with friends and family.  But I’m now in what they call the morbidly obese category.  Thanksgiving is coming and I’m in the process of preparing for a major life change, bariatric surgery.  This scares the b-Jesus out of me. We’re getting close to the end of this season. This week on Dancing With The Stars the performers needed to do two dances. One of their own choosing, the other an “Instant Jive”. They all get time to practice the rudimentary steps of this dance; the gimmick is that the dancers have no idea what song they’ll be “jiving” to! If you’ve followed all my updates you’re either amused, interested or sick to death of me telling you about how much I want JR Martinez to win this contest! Obviously the judges are starting to agree with me. He did a wonderful waltz, lyrical and graceful-got a perfect 30. If you’ve been reading my recipes you probably guess that I am big on holiday traditions. Many years ago, shortly after my divorce, a good friend invited my two young daughters and me to spend Thanksgiving with her extended family. Knowing my preference for pies she asked me to bring basic apple and pumpkin specimens to the feast.  I agreed, but warned her I would bring my corn pudding as well. Thanksgiving simply isn’t Thanksgiving without Grandmother’s corn pudding. My friend was clearly skeptical, but polite.
