This past weekend I was once again invited to a family reunion-with the amazing Diva Toby’s family. It’s funny isn’t it, how “family” has nothing to do with bloodlines. I choose to think of it as a family of the heart…and I have been fortunate to know and love this family for (gulp!) forty years.

It was a beautiful August afternoon/evening down at the beach, at the home of Toby’s cousin (and a Diva in her own right) Kaye Ellen. Family came from far and near, excellent food and the ‘Tinis were flowing!

So anyway, I’ve known about this party since late January, certainly long enough to have a plan for my assigned dessert. Sadly, on Friday night I started thinking “What should I bring?” Like most of us of a certain age, I have a long list of favorite go-to recipes, all of which bored me. So I combined a Christmas favorite with a summer attitude and came up with this as yet unnamed dessert.  For now, it’s going by Summer Strawberry Trifle … Enjoy!

Summer Strawberry Trifle

Ingredients

3-lbs strawberries – hulled and cut into quarters

½ cup sugar

2 store bought pound cake loaves

1 large (16 oz) container of Cool Whip

2 packages Instant French Vanilla pudding

3 ½ cups milk

Directions

Take 2 lbs of the strawberries – hull and cut into quarters-mix with 1/2 cup sugar, let sit X 30 minutes so they begin to macerate.  Save 1 lb (the pretties berries) hull and cut into 1/2s)

Trim off sides and bottom or the 2 pound cakes and cut into 3/4 to 1 inch pieces

Mix the 2-pkgs Instant French vanilla pudding (I only used 3 1/2 cups of milk, not the full 4 cups) with the milk make and let sit 5-10 minutes till firm.

Using a trifle bowl( or really any pretty clear glass bowl) spread 1-2 tbsp of pudding over bottom of bowl

Add 1 pound cake loaf, press lightly

Spread 1/2 of the pudding, smooth out to the edges

Add 1/2 of the berries, also to the edges

Cover with 1/2 of the Cool Whip

Repeat

When assembled decorate the top with the pretty berry halves. Chill.

I swear you’ll only need 30 minutes to make this and it seemed to be a huge hit …
