Lemon: An Alternative To Chocolate Desserts!

OK, I know it’s a sacrilege to say this… I’m not crazy about chocolate. One of the few things I never crave. Go figure. So, I’m always on the lookout for something quick, easy and non-chocolate.

This is a great recipe, goes together in minutes and you can bring it, serve it or just snack on it at home … all by yourself.

Just for fun, I’m including  3 different toppings-something for everyone!

 

Lemon Brownies

Ingredients

1 cup softened butter (2 sticks)

4 eggs
2 cups sugar
11/2 cups all purpose flour
1 tsp salt
2 tsp lemon extract
1 tbsp lemon zest

Directions

Preheat oven to 350 degrees

Grease 13X9X2 pan.

Beat together butter, sugar and eggs.

Gradually add flour and salt.

Add juice and zest. Mix til smooth.

Pour into prepared pan

Bake 30 minutes at 350 degrees til lightly browned and toothpick comes out clean.

Here’s where you can totally change this up!

1. Deep Lemon Flavor

Poke holes in brownies and cover with lemon glaze.

Lemon Glaze

1-2 cups confectioner sugar

Add  2-3 tbsp of fresh squeezed lemon juice

Mix til smooth-usually

To really up the lemon flavor add a tsp of lemon zest.

Pour over warm cake and set aside to cool

2.  Simple And Easy

Let the brownies cool slightly then dust with confectioners sugar

3.  Fancy Effect

Allow brownies to cool and decorate with lemon cream cheese frosting.

Lemon Cream Cheese Frosting

1-8 oz pkg softened cream cheese

4 tbsp soft butter

1 box confectioners sugar

2 tbsp lemon zest

2 tbsp fresh squeezed lemon juice

Beat til smooth.

To take  “pretty” up a notch .. decorate with small curl of lemon skin or edible violets.

I’ve brought this to cookouts, showers, staff meetings and wakes…always a hit. Enjoy!
